For the first part of this project, I have decided to compare ten non-stainless steels. All of the steels compared in this series are excellent Steels to use in knives. Each has its own qualities, and all are used extensively by production and custom knife makers.

Keep in mind that for the sake of this project the steels are compared to each other, not on their own. So if a steel received a low rating in one category, that is only because the other steels that received a better rating are generally considered better in that category.

All ten steels are fantastic steels, and I wouldn’t hesitate to have a knife made from any of them. I have compiled this list from through extensive research in books, the internet, and even asking a few custom knife makers their opinions, in addition to my own experience.
